2 c. egg whites
2 tsp. water
2 tsp. cream of tarter
1 tsp. salt
2 c. sugar
1 1/2 c. cake flour
1 TB white vanilla

For spice cake put in:
1 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. cloves
Mix with flour and add to mix.

For chocolate twirl cake mix:
2 tsp. cocoa with a little hot water and add to cake mix

For jello mix:
1 TB jello to flour

Directions:
Beat egg whites and water until stiff. Beat in cream of tartar, salt and sugar. Then GENTLY fold in the flour.

To make 14 cakes:
10 qts. egg whites,
8 lbs. cake flour
2 1/2 bags of sugar (4 lb. size)
2/3 pints (approximately) white vanilla
1/2 c. (heaping) cream of tartar
