1 deep dish pie crust
Slice sweet onions -( enough to fill the pie plate) can use large Spanish onions
Beat 2 whole eggs, plus another 2 egg yolks and 1 tsp salt
1 cup half and half or milk
1 cup grated aged swiss cheese
dash of cayenne pepper

Directions:
Directions:
Cook onions in butter until they are limp
Arrange onions in partially cooked pie crust
Put cheese on top of onions.
Mix milk, eggs and pepper well and pour over onions and cheese
Place on lower oven shelf and bake at 350º until pie is puffed in the middle and golden brown. (35-40 min)

* Can add a bit of cheddar or Parmesan cheese also
