8 Medium potatoes (about 3 pounds)
1 - 8 oz carton sour cream
2 Tbsp milk
Butter, softened
Salt and Pepper
1-12 oz pkg frozen cooked squash
1 egg
1 -10 oz pkg frozen chopped spinach or frozen broccoli, thaw and drain
2 tsp grated onion
¼ cup grated sharp cheddar cheese

Directions:
Directions:
Peel potatoes and cook in boiling water until done. Drain.
Add sour cream, milk, 2 Tbsp butter, ½ tsp salt and pepper, and beat well with electric mixer until smooth and creamy and no lumps. ( If the potatoes start to cool, its hard to get lumps out. Beat them while they are still hot.
In small bowl, mix cooked squash, 1 Tbsp butter and ½ tsp salt. Mix well
In another small bowl, beat egg, add thawed drained spinach, onion, 1 Tbsp butter and salt. Mix well
In 2 Qt deep dish glass casserole, layer ⅓ of potatoes, squash, more potatoes, spinach, and remaining potatoes.
Bake at 350º for 40 minutes or until heated through.
remove from oven, sprinkle shredded cheese on top and put in oven only until cheese melts.

This is a very pretty looking dish if put in a clear glass casserole dish. And it takes as good as it looks!
