Note: This recipe is for a large group. Cut amounts of ingredients down for a smaller pot.

2 cups chopped onions
2 pounds margarine or butter
4 cups flour
10 lbs canned crushed tomatoes
2 gallons chicken stock
½ gallon milk
Salt and pepper to taste
2 Tbsp sugar
2 Tbsp basil
2 Tbsp oregano
2 Tbsp thyme

Directions:
Directions:
Saute onions in margarine, add flour to make a roux. Cook 10 minutes.
Add tomatoes, chicken stock, and seasonings. Bring to a boil, reduce to a simmer for 30 minutes.
Add milk, and adjust seasoning and consistency.
Tomato juice can be used instead of or in combination with the tomatoes.
Add garlic to make more flavorful.

This recipe came from a restaurant in Amish country in Pennsylvania. It was delicious!
The recipe is obviously for a large amount. You will have to cut the measurements down for family size pot of this.
