4 medium beets, rinsed and scrubbed
2 tsp olive oil
salt and pepper
fresh rosemary and thyme

Directions:
Directions:
Preheat oven to 350º. Peel and slice beets thinly. Toss with olive oil then transfer to baking sheets in a single layer. Sprikle with salt and pepper and chopped rosemary and thyme. Bake 14 to 18 minutes, until slightly browned. Remoe and let them cool - they will become crispier as they cool.
