1 lb butter
2 1/2 cups white sugar
1 cup water
4+ tablespoons Karo syrup
1lb of grated chocolate or chocolate chips. (I use 6 large symphony bars )
1/2 lb of chopped nuts ( I use dry roasted salted)

Directions:
On a large sheet pan spread 1/2 almonds and 1/2 chocolate.
In a medium or large pan melt butter, water, karo syrup and sugar. Use wooden spoon and stir constantly on med- med/ high heat. Using candy thermometer stir and cook until thermometer reads 285-290. ( I like it to be between soft and hard crack.). It will look the color of peanut butter and thicken up a bit. Poor the melted mixture over the nuts and chocolate in pan. Use silicone rubber scraper to even out. add the rest of the shaved chocolate and use rubber scrapper to spread evenly. Sprinkle the remaining nuts over the chocolate. Let cool in fridge for 3 hours or 5 hours at room temperature. Break apart with nice.
