1 package (375g) Linguine
1 ½ lb boneless, skinless chicken breasts, cut into strips
1/3 cup chicken broth or 1 tsp chicken in a mug and 1/3 cup water
1 garlic clove, minced
1 carrot, julienned
1 zucchini, julienned
1 red pepper, julienned
1 yellow pepper, julienned
1 cup whipping cream (can use 2 cups of ½ and ½)
¾ cup parmesan cheese
Salt

Directions:
Directions:
Cook linguine according to package directions. In non-stick skillet, saute chicken until golden. Remove chicken; set aside. Add broth to skillet, stirring and scraping browned bits from bottom. Stir in garlic, carrot, zucchini, and peppers. Reduce heat; cover. Steam until veggies are tender-crisp, about 3 minutes. Stir in cream, cook just until thickened. Stir in ½ cup of the parmesan cheese and reserved chicken. Season to taste with salt and pepper. Toss linguine with cream sauce. Serve topped with remaining parmesan.
