1 cup butter or margarine
1 cup granulated sugar
1 egg
2 teaspoons vanilla extract
(Optional: Add 2 teaspoons chocolate extract)
6 tablespoons good quality cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
2 cups unsifted all-purpose flour

Preheat oven to 375 degrees.
Cream butter or margarine until light.
Add in sugar and beat until light and fluffy.
Add eggs and vanilla, beating until combined.
Blend cocoa, baking powder, salt, and flour together.
Gradually add to creamed mixture until incorporated. Fill cookie press ½ to 2/3 full. Press cookies onto ungreased cookie sheets. Bake approximately 10-12 minutes, rotating sheets halfway through the baking time. Cookies are done when lightly firm. Cool on baking sheet 1 minute, then transfer to rack to finish cooling.
