1 cup butter - 227g
2/3 cup granulated sugar - 133.3g
1 egg, slightly beaten
1 tablespoon almond extract
2-1/2 cups all-purpose flour - 300g
3/4 teaspoon baking powder
1/4 teaspoon salt

Directions:
Directions:
Preheat oven to 350 degrees. Cream butter. Add sugar gradually; continue creaming until light and fluffy. Blend in egg and flavoring. Add any desired food coloring. Add flour, baking soda, and salt. Blend until incorporated. Fill cookie press about 1/2 to 2/3 full and press cookies onto cool, ungreased cookie sheets. Bake for 10-12 minutes (will vary by individual oven), rotating cookie sheets half way between baking time. Cookies should be slightly
firm and lightly browned on the bottoms. Cool on cookie sheets for 1 minute and then transfer cookies to a rack to cool. These freeze well.

Flavor variations for traditional almond Spritz cookies:
Substitute 1 tbsp. vanilla extract for almond extract and add food coloring of choice for vanilla spritz
Substitute 1 tbsp. lemon extract for almond extract and add yellow food coloring for lemon spritz
Substitute 1 tbsp. orange extract for almond extract and and add orange food coloring for orange spritz
Substitute 1 tbsp. pumpkin pie extract for almond extract and add 1 tablespoon pumpkin pie spice for pumpkin spice spritz
