1 lb breakfast sausage
1 onion chopped
1 red bell pepper chopped
12 eggs
1/2 c milk
1 Tbls hot sauce
1/2 tsp salt
1/4 tsp pepper
1 32 oz bad tater tots
8 oz shredded colby jack cheese blend


Directions:

Preheat oven to 350. Heat a large skillet over medium-high heat. Add sausage and cook, breaking it up with a wooden spoon until browned, about 5 min. Add onion and bell pepper and cook stirring occasionally until tender, 8 to 10 minutes.
Whisk together eggs, milk, hot sauce, salt and pepper in a large bowl. Arrange tots in an even layer in lightly greased 3 quart baking dish. Top with 1 cup of cheese and the sausage mixture. Pour egg mixture over top and top with remaining cheese. Bake until set in the middle 50-55 minutes. Let stand 10 minutes before serving.
