1½ # Brussels sprouts, trimmed and cut in ½ through the core
4 oz. pancetta, ¼-inch-diced
¼ cup good olive oil
kosher salt and freshly ground black pepper
1 T. syrupy balsamic vinegar

Directions:
Directions:
Preheat oven to 400º
Place the brussels sprouts on a sheet pan. Add the pancetta, olive oil, 1 1/2 tsp. salt and 1/2 tsp. black pepper. Toss with your hands and spread in a single layer. Roast for 20 to 30 minutes, until they are tender and nicely browned and pancetta is cooked.
remove from oven and toss with Balsamic vinegar.
