1 cake mix, yellow or white
4 eggs
3/4 c. water
3/4 c. oil
2 large boxes vanilla pudding, instant
2 (8 oz) cream cheese
2 c. milk
2 (20 oz) cans crushed pineapple, well drained
2 medium cool whip
Coconut
Walnuts

Directions:

Beat dry cake mix, eggs and water for 5 mins. Add oil and beat until well blended. Bake at 350º in lightly greased 17"x12" for 20 mins. Cool. Beat pudding, cream cheese and milk together. Spread on cooled cake. Spread on pineapple then cool whip. Sprinkle with coconut and nuts. This makes a very large cake.

Betty Cook, a woman I worked for in Washington taking care of her down syndrome sister until she passed, became a very close friend of mine and continued to come visit me after I married dad. She made this cake for me for my birthday one year. She got save 1 week before she died of kidney failure. God is not willing that any should perish is the verse that came to mind when I got the news of her passing. Thank God she made it!
