1 beef tenderloin (3-4 lbs)
3 cloves of garlic, thinly slivered
1 Tbls olive oil
Coarse salt and pepper

Directions:
Directions:
Preheat oven to 425
Cut small slits into the meat and insert garlic slivers. Brush the meat with olive oil and rub with salt and pepper.
Place the meat on a rack in a small shallow roasting pan and roast it for 15 minutes.
Reduce the oven temperature to 350 and roast another 20 minutes for medium rare, 5 min more for medium.
Let the roast rest at room temperature for 20 minutes before slicing.
