4 Cups Self-Rising Flour, plus more for the work surface
2 Tbsp. Baking Powder
1 tsp. Baking Soda
¾ pound (3 sticks) salted Butter, cold, cut into ½ inch pieces or grated
2 large Eggs, beaten plus 1 Lg. egg for brushing
1½ Cups Buttermilk or as needed, plus 1 Tbsp. for brushing

Directions:
Directions:
1.In lg. bowl, whisk flour, baking powder & baking soda. Add butter. Use a pastry blender to cut butter into the flour until pieces are about pea size.
2. Stir in beaten eggs with wooden spoon. Stir in 1½ Cups Buttermilk until the dough comes together into a sticky mass. If too dry, add more buttermilk 1 Tbsp. at a time. Cover the bowl & refrigerate at least 30 minutes - overnight.
3. Position rack in middle of oven & preheat to 400º. Line baking sheet with parchment paper.
4. Scrape dough into floured work surface. Flour hands. Press dough into a round, 14" across & ½" thick.
5. Use a floured 2¾" round cutter to cut about 20 biscuits.
6. Transfer biscuits to prepared baking sheet & arrange so they all are touching.
7. In small bowl beat remaining egg & 1 Tbsp. buttermilk. Brush top of biscuits.
8. Bake until golden brown, 15 to 20 minutes. Let cool slightly in pan on a rack.
9. Biscuits are best the day they are made & fresh out of the oven. Serve with Jam or gravy.
