3 c. frozen cubed hash brown potatoes
2 c. Monterey Jack cheese (or cheddar)
1 lb. cooked sausage, crumbled
¼ c. chopped onion
6 eggs, beaten
1½ c. milk
½ t. salt
½ t. pepper

Directions:
Directions:
Beat eggs, milk, salt, and pepper. Set aside. Grease 9x13 inch casserole dish. In a large bowl, mix hash browns, sausage, cheese, and onion. Pour into the greased casserole dish. Pour egg mixture over top. Sprinkle with extra cheese. Bake at 350º F for 1 hour.
