1 cup whole grain spelt flour(online stores have it) or all purpose flour
2 tsp cornstarch
1 tsp salt
1/2 cup brown sugar
1/2 cup white sugar (and a little extra to roll in)
1 tsp baking soda
1/3 cup olive oil
1/3 cup unsweetened vanilla almond milk
1 cup chunky or creamy peanut butter

Preheat oven to 325.Line a cookie sheet with parchment paper.Whisk all the dry ingredients set aside.In another bowl whisk the wet ingredients .Add the wet to the dry a stir by hand until combined ,Using a cookie scoop or spoon scoop out dough into a ball. Than roll in some sugar, Use a fork to make a crisscross over each ball, Bake for 10 to 12 min.Cool on racks .
