1 1/2 lbs. ground beef, browned and drained
1 bell pepper, chopped
6 green onions, chopped
5 fresh mushrooms, chopped
2 jalapenos, seeded and chopped
1 tomato, chopped
1 full bunch fresh cilantro, chopped
1 pkg. taco seasoning
2 TB garlic powder
2 TB dry parsley flakes
1 avocado, chopped
1 can kidney beans, drained
1/2 c. Velveeta cheese, cubed
1 can Rotell tomatoes with chilies
Salt to taste
Water as needed

Directions:
Brown and drain beef. Add bell pepper, green onions, mushrooms, jalapenos, tomato, cilantro and cook until tender. Add Velveeta and cook until melted. Add taco seasoning, garlic, parsley and salt. Add water if needed. Add kidney beans, Rotell and avocado and cook until heated thru. Serve over rice.

I made this up one evening for supper. My family loved it so we decided to write down what I did. We combined Dulce and Melisa's names together for the name of the recipe. Sis. Tina and Nathaniel were here also. January 2015
