2 c whipping cream
1/3 c white sugar
5 egg yolks
Brown sugar

Scald cream (bring it just to a boil) Add sugar and stir to dissolve. Remove from heat. In a large bowl, beat egg yolks. Whisk cream very slowly into yolks. Pour mixture into an 8" shallow bowl or 6-8 ramekins. Bake in a large pan with 1" of water at 325 for 30-40 minutes. Ad the end of 30 minutes give a "shake" test and continue to cook if the custard doesn't look firm. Cool. Refrigerate 12 hours. Sprinkle 1/4" brown sugar on top. Broil until it melts and is golden brown.
