Dough:
2 eggs
2/3 c. water
1/2 tsp. salt
1 3/4-2 1/2 c. flour approx.

Make a dough and roll out. Put one lay on the Pelmeni Maker (bought from Germany) or you can form them by hand.

Filling:
2 1/4 c. ground beef
2-3 onions, chopped
salt and pepper to taste

For the filling: mix all ingredients, put a little ball of meat into all the holes, add a second layer of dough on top of it. Press a little bit with the hands first, then really press with a rolling pin until the individual Pelmenis separate. Bring 3-4 litres of water to boil. Add salt. Put Pelmenis into boiling water, let cook for approximately 5 mins. Serve with sour cream and ketchup.

If forming by hand, cut very small circles of dough (about the size of your middle finger place in a circle against the thumb or a bit larger) and place small ball of meat mixture in lower center. Fold top over and press to seal. One of our favorite dishes from Europe!
