8 c spinach leaves
1 avocado, thinly sliced
1/2 c thinly sliced red onion
1/2 c dried cranberries or 1 c pomegranate seeds

Dressing:
1/4 c cranberry juice concentrate
1/4 c white wine vinegar
1 1/2 tsp dijon mustard
1/4 tsp freshly ground pepper
1/2 c vegetable oil

Directions:
Directions:
Stem spinach, tear into bite sized pieces and place in a large salad bowl. Place avocado and onion over spinach.

Dressing:

Combine cranberry juice concentrate, vinegar, mustard, pepper and oil in a jar with a tight fitting lid. Shake until well blended. Drizzle over salad. Sprinkle dried cranberries over salad and toss gently.
