1 (10 lb.) bag chicken leg quarters
13 med/large potatoes
2 lbs. baby carrots
1/2 c. butter
4 TB minced, fresh rosemary or 2 TB dry, crushed
2 TB fresh parsley, chopped
3 or more garlic cloves
1 tsp. salt
1/2 tsp. pepper
2 (or more) onions, quartered

Line a 14" Dutch Oven with bacon. In saucepan melt butter and stir in seasonings. Place chicken in D.O. over bacon. Spoon 1/2 the butter mixture over chicken. Place potatoes, carrots and onions around chicken. Drizzle remaining butter mixture over vegetables. Cool over hot coals or can be baked in over at 350º for 1 1/2 hours, basting every 30 mins. This recipe comes from Sis. Debbie Loftis. We often made this when we did D.O. cooking together.
