5 slices fatback
1-1/2 lbs. fresh green beans (rinsed well), ends removed and snapped in half
1-1/2 lbs. small (“new”) potatoes
1 tsp. salt (more or less, to taste)
1 tsp. pepper (more or less, to taste)

Directions:
Directions:
Cover green beans with water, add fatback, salt and pepper and cook for a few hours until beans are tender. Adding more water if necessary to keep beans covered.
Add potatoes and cook until potatoes are done.
