1 ¼ lb. lean ground beef with 2 t. veg. oil
1 c. chopped onions
1 stalk chopped celery with leaves
1 ½ large carrots, grated (cook additional 5 min, then stir in)

1 can ( 2lb 3oz) Italian Petite Diced Tomatoes ( use only ½ the liquid)
16 oz. can tomato sauce
1 T. salt
¾ t. dried oregano
½ t. pepper
½ t. garlic powder
1 bay leaf
1 t. sugar

¾ of a box of narrow egg noodles
10 oz. box of frozen chopped spinach, slightly thawed
½ cup grated parmesan cheese

Brown the ground beef and drain the grease. Add onions and saute with celery and carrots. Cook an additonal 5 minutes before adding the next 7 ingredients. Bring to a boil, lower heat and cover. Simmer 1 hour.

While the tomato and meat mixture is simmering, cook the noodles, following the directions on the box. Drain the cooked noodles and set aside. Squeeze the liquid out of the thawed chopped spinach. Add the spinach and the noodles to the mixture. Mix thoroughly and place in a greased 9" x 13" casserole dish. Sprinkle ½ c. grated parmesan cheese on top. Bake at 350º for 30-45 minutes.

I remember mom walking into the dining room carrying the Italian Hotdish. The handles of the dish collapsed and the hotdish went up in the air and hit the wall and ceiling of the kitchen. We still ate what stayed in the dish. Dad had to repaint the wall and ceiling of the kitchen.
