2 cups whites sugar
1 cup brown sugar
1 cup white corn syrup
1 cup heavy cream
1 cup butter
1 cup whole milk


4 tsp. vanilla ( the best quality you can afford)

Directions:
Combine all ingredients except vanilla. Cook to a hard ball stage, stirring frequently. Add vanilla and pour into 9' by 13" well greased pan.(I use butter flavored Crisco) When firm, cut into pieces and wrap with waxed paper.


This is the basic recipe for ANY caramels. The secret to great caramels is cooking them to the correct firmness. You can use a candy thermometer for this. Or what I do, is place a small bowl of room temp water next to my cooking pot, place a small spoonful of hot caramel in and let it cool. That will be the firmness of the caramel when done. Not too soft, not too hard. Just right!
