3 c. of raw unpeeled zucchini, grated and drained
1½ c. of corn oil
3 c. of sugar
4 eggs beaten
3 c. of flour
1 tsp. of salt
1½ tsp. of baking powder
1 tsp. of baking soda
1½ tsp. of cinnamon
1 c. of pecans, chopped

Icing:
1 pkg. of cream cheese
2 c. of powdered sugar
1 T. of softened butter

Directions:
Directions:
Preheat oven to 350º.
Mix together zucchini, corn oil, sugar, and eggs. Set aside.
Sift together flour, salt, baking powder, baking soda, and cinnamon.
Mix dry ingredients with zucchini mixture. Blend well.
Add pecans.
Either grease 3 loaf pans or one 9x13 pan.
Bake for 1 hour, maybe less in loaf pans.
Let cool and ice with cream cheese frosting if you want to.

Icing directions:
Beat ingredients until spreading consistency.
