1 c. white, plain cornmeal
(I use all yellow)
1 c. yellow, plain cornmeal
1/2 c. flour
2 tsp. baking powder
1 TB sugar
3/4 tsp. salt
1 egg
1 1/2 c. buttermilk
3 TB butter, melted
3 TB shortening (I use all butter)
1/8 c. oil

Directions:
Directions:
Mix dry ingredients and then add wet ingredients. Heat 1/8 c. oil in a black cast iron skillet until smoking hot. Pour batter into hot pan. Bake 400º 25-30 mins, until it cracks. This is much like the Cracker Barrel cornbread muffins. Very good with pinto beans.
