2 pounds lean ground beef
1 cup bread crumbs
1 cup chopped onion
1/2 cup egg substitute
1/4 tsp salt
1/4 tsp pepper
1/2 cup ketchup
1/2 cup thick & chucky salsa

Directions:
Directions:
Coat a large crockpot with cooking spray. Tear off 2 lengths of aluminum foil long enough to fit in bottom of slow cooker and extend 3 -inches over each side. Fold each strip lengthwise to form 2 -inch wide strips. Arrange foil straps in a cross fashion in cooker and extend over sides of cooker.
Combine beef and next 5 ingredients; shape mixture into a loaf the shape of the crockpot. Place loaf in cooker over foil strips (foil becomes handles to remove meatloaf from slow cooker).
Make a shallow indention on top of meatloaf. Combine ketchup and salsa; pour over meatloaf.
Cover and cook on LOW heat 8 hours or on HIGH for 4 hours.
Use foil strips to remove loaf from the cooker. Let stand 10 minutes before cutting and serving.
