Raspberry Lemon Muffins Recipe

½ cup vanilla yogurt
3 T. vegetable oil
1 T. lemon juice
2 egg whites
1 ½ cups flour
¾ cup sugar
2 tsp. baking powder
1 tsp. lemon zest
¼ salt
1 cup frozen raspberries
2 T sugar

Directions:
Directions:
Preheat oven to 400º
Spray muffin tin with non stick spray or use paper liners.
In a small bowl, combine yogurt, oil, lemon juice and egg whites. Blend well.

Combine flour, sugar (3/4 cup), baking powder,lemon zest and salt. Stir in Raspberries.
Add yogurt mixture to flour mixture, just until everything is moistened.

Spoon batter into muffin cups, sprinkle with sugar.

Bake for 16-20 minutes.
