Ingredients: Cooked cereal: 2 c. hot water 3/4 c. whole wheat, coarsely cracked 3/4 c. rye, cracked 2 TB flax seed 2 TB sesame seed 1/4 c. sunflower seeds, slightly cracked 1/2 c. butter, softened
Rest of ingredients: 1/2 c. dry milk 6-7 c. whole wheat flour or 5 c. whole wheat and 1-2 c. bread flour 2 TB yeast 2 c. water 1/3 c. honey 3 eggs 1 TB salt

Directions:Cook cereal & add butter, set aside. Mix 3 c. flour, yeast & dry milk in a mixer bowl with kneading arm. Mix well. Add water and honey to see mixture. Add this mixture to ingredients in mixer. Mix 1 min. Turn off, cover bowl and let dough sponge 10 mins. Add eggs and salt. Turn on mixer. Add remaining flour 1 c. at a time, just until dough begins to make a ball and clean sides of bowl. Knead 5-6 mins. Dough should be pliable, smooth and elastic, but not sticky. Lightly oil hands. Shape dough into 1/4 c. balls. Place quite close together, but not touching, on baking sheets. Let rise until double. Bake 350º 18-22 mins. Put extra rolls in freezer.
Everyone just loves these rolls, especially hot out of the oven. They freeze nicely also. Great to make ahead and freeze for meetings and company. Just take out of freezer, run cold water over them while still frozen and place on baking sheet. Heat hot oven 350º until heated through. Tastes almost as good a fresh! :) Aunt Rachel thought they were the best. |
