1 Tbsp unsalted Butter
2 Cups shredded cooked Chicken
½ Cup buffalo-style Hot Sauce
½ tsp fresh Lemon Juice
¼ Cup Sour Cream
4 oz. Cream Cheese, cut into pieces and softened
½ Cup freshly shredded white Cheddar Cheese
¼ Cup crumbled Blue Cheese
1½ tsp finely chopped chives
Serve with: Celery Sticks, carrot Sticks, bread, potato chips or tortillo chips

Heat oven to 375º. In an 8" cast iron or ovenproof skillet, melt the butter over medium-high heat. Add Chicken & Hot Sauce. Simmer until the sauce has thickened & reduced by half (2 to 3 minutes).
Remove from heat. Stir in lemon juice, sour cream & cream cheese until combined. Sprinkle the Cheddar cheese over top.
Bake until bubbling around the edges & the cheese has melted. About 10 minutes. If you like the top browned, run it under the broiler for a minute or two. Immediately garnish with Blue cheese & Chives. Serve with chips, bread or veggies.
