3 cups sugar
2/3 cups cocoa powder, unsweetened
⅛ tsp salt
1 ½ cup milk
¼ cup butter or oleo, melted
1 tsp vanilla extract

FOR PEANUT BUTTER FUDGE:
add ¼ cup peanut butter
be sure to use butter not oleo

FOR MARSHMALLOW FUDGE:
increase cocoa to 3/4 cup
add 1 cup marshmallow fluff when adding the vanilla and butter - do not stir
add 1 cup your choice of nuts after beating the mixture for 10 minutes

Thoroughly combine cocoa, sugar and salt in a 4qt saucepan. Gradually add the milk and bring to a "bubbly" boil on medium heat stirring constantly. Continue to boil without stirring to a temperature of 234º or until a small amount of the mixture forms a ball when dropped in to cold water. When checking the temperature, make sure the thermometer is not touching the bottom of the pan.

Remove from the heatand add the butter and vanilla but do not stir. Cool at room temperature until 110º. Beat by hand until the fudge thickens and loses some if it's form. Quickly spread fudge in to a lightly buttered 8" or 9" square pan.

Cool completely.
