5 cups all purpose flour
3 tsp dry yeast
1 cup lukewarm water + 3 tbsps to mix the yeast
1 tbsp sugar
1 large egg
1 tbsp tahini (the secret ingredient)
Ground sesame seed (search recipe to make)
3 tbsps olive oil
7/8 cups (250 ml) lukewarm full fat milk
1 tsp salt
1 tbsp sugar for the sesame seeds

Mix the yeast with 3 tablespoons water and sugar. Leave it for 10 minutes. Add flour, water, tahini, egg, oil and milk. Add the salt last.

Mix and knead by hand for at least 10-15 minutes or with machine for 8 minutes. If the dough is loose add more flour, too hard add more water.

Oil a bowl and place the dough inside. Cover with plastic and leave to rest for 30 minutes.

Divide the dough into 10 parts. Roll out to long pieces about 20-25 cm (7-9 inches), dip in water and roll in sesame seeds. Add 1 tablespoon sugar to the sesame seeds to make them stick better to the rings.
Shape as a ring and place it on some parchment paper in a baking tray. Not touching.

Put in oven rack in the bottom of your oven. Add oven proof dish filled with water on the rack. Heat the oven to 200C (390º Fahrenheit) and bake the rings in the middle of the oven until they are golden. Approx 15-20 minutes.
