2 eggplants
1 red onion
2 cloves garlic
½ cup chopped fresh parsley
1 big tomato - diced
2 tbsps lemon juice
½ cup olive oil
Salt
Pepper


Directions:
Directions:
Wash eggplants and put on foil and cook it in oven at 200 C for 45 minutes to 1 hour until soft.

Finely chop onion, garlic and tomato and add all other ingredients. Mix well.

Take skin off the eggplant and mash it with a fork. Add to the rest and let cool.

Serve as a spread with pita bread.
