Perfect Whole Wheat Bread Recipe

Ingredients: 4 c. lukewarm water 3/4 c. olive oil 1/2 c. raw honey 3 TB yeast 2 TB lecithin granules 2 TB heaping, wheat gluten (I often leave this out) 2 TB sea salt 12-14 c. wheat flour, freshly ground (8 c. spelt berries)

Directions:Put water, oil and honey in Bosch mixer. Mix briefly. Add next 4 ingredients and mix. Add 6 c. flour. Mix well. Add 5 more cups flour and mix well. Continue adding 1/2 c. at a time while mixer is on speed 1 until dough starts cleaing side of bowl. Mix for 10 mins on speed 1. Let set 5 mins. Divide dough into 5 loaves. Place into greased bread pans and prick tops with a fork to remove air bubbles. Place in warm area to rise. Bake 350º for 30 mins or until done. Remove from pans and place on cooling racks. Let cool completely before placing in bread bags. Can be used as buns. Roll 1/2"-3/4" thick and cut with a wide mouth screw on ring. Let rise 30 mins and bake 15-20 mins at 300º. Sesame seeds can be rolled in with a rolling pin before cutting. After cooling, split in 1/2 and use as sandwich buns or hamburger buns. Soft & yummy! Can also use 3/4 lb dough for thin, round pizza crust. Let rise 30 mins, bake 12 mins. at 300º. Put family's favorite toppings and bake until done. Makes 4 loaves |

Notes: This recipe passes the wrap-around-a-hotdog test! This recipe, as of 2014-2018 is our favorite bread. I don't usually buy bread anymore, just make this recipe. If I make it around lunch time everyone will eat bread, butter and honey only for lunch. Dad, Amos, Joel and Meme keep an eye on the oven to be sure they are around for the hot bread as it comes fresh out of the oven! They love it with fresh homemade butter and raw honey from our farm slathered all over it.
