2 Tbsp butter, melted
2 cups self-rising flour
⅓ cup butter-flavored Crisco
¾ to 1 cup buttermilk

Melt butter in large, cast iron skillet Using a pastry blender or two knives, cut Cisco into flour until mixture resembles coarse crumbs. Add buttermilk and knead lightly to form dough. Pat into a circle about one half inch thick. Fry in a melted butter on both sides until brown and cooked through. To serve, tear into pieces.

Tip: turning the hoe cake in the pan takes practice! You can make smaller hoe cakes rather than one large one, and they’ll taste just as good. Granny might have something to say about it, though. :)

My grandmother, Annie Swann Clark, taught me to make hoe cakes. She never measured the ingredients, but this is a close approximation.
