½ cup sugar
16 ozs cooked carrots or canned yams
3 eggs
1 Tbsp self-rising flour
1 tsp baking powder
1 tsp vanilla extract
1 stick melted oleo or butter
Dash of nutmeg
Dash of cinnamon

Directions:
Directions:
1. Slightly mush carrots or yams.
2. Combine all ingredients.
3. Place mixture in greased baking/soufflé dish.
 

Topping

1 cup cereal such as Honey Bunches of Oats or Frosted Flakes
¼ cup brown sugar
3 Tbsp melted oleo or butter
½ cup nuts (optional)


Directions:
Directions:
1. Preheat oven to 350º.
2. Crush cereal.
3. Add all ingredients and mix well.
4. Place on top of carrot/yam mixture.
5. Bake for approximately 45 minutes.
