1 can peas, drained
1 can corn, drained
1 can French-style green beans, drained
6 green onions, chopped
½ cup celery
1 cup green pepper, chopped
1 jar pimento, drained
⅔ cup white or cider vinegar
½ cup sugar
⅓ cup oil
salt and pepper to taste

Directions:
Directions:
Combine all vegetables in a bowl. Combine vinegar, sugar, and oil in a saucepan, and boil until sugar dissolves. Pour over vegetables and refrigerate overnight.

Another of my mother’s favorites, this is an easy make-ahead dish that travels well. The first time my father and I met our “long-lost” (i.e, found through Ancestry.com) cousin, Cathy Whittaker Clark, I brought this dish, and her husband, Boscoe, loved it!
