3 Tbs. Earth Balance (or Butter)
1 ½ Tbs. Maple Syrup
Mini Chocolate Chips
Splash of Vanilla (optional)

Preheat Oven to 350 degrees. Combine ingredients in a bowl and mix well. Line a baking tray with parchment paper. Form the cookies and place on the tray. Bake for 7-10 minutes. Less time for softer cookies.

1. Double the recipe, and make one batch with chocolate chips, and one batch plain for butter cookies.

2. Almond flour can be purchased in the bulk section of the health food store. Almond meal can be purchased from Trader Joes. Almond flour is ground blanched almonds – skins removed. Almond meal is ground almonds, skins on.
