1 lb ground beef
1 egg
1 tbsp. tomato paste (use tube)
1 tbsp. yellow mustard
2 tbsp. Worcestershire sauce
½ tsp garlic powder
¼ c dry breadcrumbs
½ tsp black pepper
kosher salt to taste
Gravy: 2 tbsp. butter
1 large onion diced, about 2 cups
6 oz sliced mushrooms, optional (may use ½ can mushroom soup)
2-3 tbsp. flour
½ tsp dried thyme
1 ½ c beef broth
1 tbsp. soy sauce
3 tbsp chopped parsley, garnish

Directions:

Combine the ground beef, egg, tomato paste, mustard, Worcestershire, garlic, breadcrumbs, S & P. Mix well to combine, shape into 4 oval patties.

Heat a large skillet over medium heat, then add butter. Place meat patties and brown on all sides, 4-5 minutes, remove and set aside.

Prepare the gravy: add chopped onion to the skillet and reduce heat to med-low. Cook until translucent and carmelized, about 15-20 minutes. Sprinkle flour over onions and stir to coat,
2 tbsp flour for thinner gravy 3 for thicker. Cook another minute, until smells toasty. Add thyme cook about 30 sec till fragrant. Gradually add beef broth and soy sauce and gradually raise the heat back to medium.

Add seared patties back to skillet. Bring to gentle simmer, cover, and cook the patties 10-15 minutes, until cooked through. Gravy will thicken as it cools.

Serve with mashed potatoes and peas.
