6 C frozen shredded hash browns
1½ C shredded Monterey Jack Cheese
2 C diced cooked ham
(can use bacon too)
½ C chopped green onions
8 eggs
2 cans (12oz each) evaporated milk
½ teas pepper
¼ teas salt

Directions:
Directions:
Place potatoes in a 8 X 16" baking dish. Sprinkle with cheese, ham & onions. Beat eggs, milk, salt & pepper. Pour over potatoes, cheese, ham & onion.
Refrigerate several hours or overnight. Remove from refrigerator for 30 minutes before baking.
Bake uncovered at 350ºF for 55-60 minutes.
