5 cups cake flour
1 tablespoon baking soda
1 tablespoon baking powder
2 tablespoons pumpkin pie spice
2 teaspoons salt
1 (1 lb. 13 oz) can pumpkin puree
3 cups sugar
1 1/2 tablespoons vanilla
1 1/4 cup canola oil
1 (12-ounce) bag mini chocolate chips

Preheat the oven to 375 degrees. Line 2 baking sheets with parchment paper or silicone mats.

In a large bowl, combine the flour, baking soda, baking powder, pumpkin pie spice and salt. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment, add the pumpkin, sugar, vanilla and oil. Mix on medium speed for 1 minute. Add the flour mixture, 1 cup at a time and mix on low speed just until the flour is incorporated and add another cup of flour. Add the chocolate chips and mix on low just until combined.

Scoop heaping tablespoonfuls of dough onto the prepared baking sheets. Bake until dry and golden on the edges and lighter in color, 15-17 minutes. Remove from the oven and let rest 5 minutes. Transfer to wire racks and let cool completely.
