* 1 cup butter
* 1 cup light corn syrup
* 1/8 tsp salt
* 2 1/4 cups packed brown sugar
* 1 - 14 oz. can sweetened condensed milk
* 1 tsp vanilla extract
* 1 3/4 lbs whole pecans
* 1 cup semisweet chocolate chips
* 1 cup milk chocolate chips
* 2 Tbsp shortening

In a large sauce pan combine over low heat, butter, corn syrup and salt until warm. Add brown sugar and cook until sugar is dissolved. Gradually add condensed milk and mix well. Continue cooking over low to medium heat stirring constantly until candy thermometer reads 248º (firm ball stage). Remove from heat and stir in vanilla until blended. Fold in pecans. Drop by tablespoonfuls onto parchment paper lined cookie sheets that have been lightly sprayed with a non stick cooking spray. Chill until firm. Melt chocolate chips and shortening in a microwave safe bowl or double boiler. Drizzle over each pecan cluster. Cool and serve. Makes about 4 dozen turtles.
Notes:
A) When making candy always check the boiling point of your candy thermometer in boiling water before using. Then adjust your recipe accordingly.
B) You can substitute chocolate candy coating for the chocolate chip and shortening mixture.
