12 manicotti or cantelloni
2 lbs ground beef
1 cup onion, chopped
1/3 cup celery, finely chopped
1 garlic clove
½ cup spaghetti sauce
2 cups mozzarella cheese, grated
½ cup fine bread crumbs
¼ cup parmesan cheese
2 tsp salt
¼ tsp pepper
2 eggs, beaten

Boil manicotti/cantelloni until ½ cooked. Brown the beef with the onion, celery, and garlic. Add spaghetti sauce and mozzarella cheese. In a separate bowl, combine the remaining ingredients, then add to beef mixture. Stuff the manicotti/cantelloni. Pour some spaghetti sauce on the bottom of a 9" x 13". Lay manicotti/cantelloni on sauce. Pour the rest of the sauce over the manicotti/cantelloni. Sprinkle grated cheese over top. Bake at 400º for 30 - 40 minutes, covered with foil.
