2 lbs lean ground beef
1 onion, chopped
1 garlic clove, minced
2 tbsp chili powder
3 cups tomato sauce
1 tsp sugar
½ cup black olives, sliced
2 - 4 oz cans green chiles, chopped
1 jalapeno pepper, sliced
2 cups ricotta chese
1 egg, beaten
2 cups Monterey Jack cheese, grated
12 soft corn tortillas
1 cup cheddar cheese, grated

Directions:
Directions:
Brown meat and drain. Add onions and garlic; saute until soft. Sprinkle with chili and mix well. Add tomato sauce, sugar, salt, olives, chilies, and jalapeno. Simmer 15 minutes. Break up the ricotta cheese and if you add cottage mix to the beaten egg. Set aside. In a 9" x 13", layer 1/3 meat mixture, ½ the Monterey Jack cheese, ½ the ricotta followed by ½ the tortillas. Repeat process ending with meat sauce on top. Sprinkle with cheddar cheese. Bake at 350º for 30 minutes. Serve with green onions, sour cream, and salsa.
