* 8 quarts Roma tomatoes, peeled and chopped
* 5 cups green bell pepper chopped
* 9 cups finely chopped onion
* 2 cups finely chopped jalapeno peppers with seeds
* 3 cups cider vinegar
* 6 to 8 cloves minced garlic (1 bulb)
* 1 - 12oz can tomato paste
* 2 Tbsp salt

Cook down 1/2 of tomatoes in a large kettle at a simmer for an hour. Then add the rest of tomatoes and cook for another 1/2 hour. Add all the other ingredients and continue to cook down for another hour, stirring occasionally until mixture reaches the consistency that you prefer. Sanitize pint jars and lids. Fill prepared jars leaving 1/2 inch head space. Adjust jar covers and process in a pressure canner for 20 minutes at 5 lbs of pressure. Makes 20 to 24 pints.

Note: Finely chop jalapenos in a food processer. Heat can be adjusted by using more or less jalapenos. This sauce recipe is a medium heat.
