green and/or red peppers

Vinaigrette

Basic mix: 1 part vinegar (red wine, apple cider, balsamic). 3 parts oil( EVOO, grapeseed, nut).
1 tbsp dijon mustard. S & P, garlic, and fresh herbs or tuscan sunset.
I usually add 1 tsp lemon juice, 1 tsp honey as well.

Whisk or combine in mason jar, keeps for a week in the fridge.
 

Croutons

Bread (Save and freeze all bread ends).
EVOO
S & P
garlic
herbs

Sautee bread cubes in olive oil, seasoned with S & P, garlic and herbs.
Low and slow, burns easily.
