1 29 oz can sweet potatoes
1/2 t salt
3/4 t cinnamon
1/3 C Brown Sugar
1/2 stick butter
Cornflake Crumbs
1 package large marshmallows

Directions:
Directions:
Drain sweet potatoes, reserve 1 T of the juice. Mash and whip potatoes with a beater. Add salt, cinnamon and brown sugar. Mix and add the reserved juice 0it should be the consistency of white whipped potatoes). Place approximately 1/4 C potatoes around each marshmallow and form a ball. This will make 8 to 9 balls. Melt 1/2 stick butter. dip each ball into butter and then into cornflake crumbs. (They can be stored in the refrigerator for a few days. Leve at room temperature at least an hour before baking. Bake for 10 to 15 minutes at 400 degrees.
