2 tsp oil
4 cups (1/2 -inch) diced zucchini
1 cup frozen corn kernels, thawed
2 tbsp. chopped fresh parsley
2 tbsp. sliced green onion
1/4 tsp salt
1/8 tsp pepper

Directions:
Directions:
1. Heat oil in a large skillet over medium-high heat. Add zucchini and corn; sauté 5 minutes or until zucchini is tender.
2. Add parsley and remaining ingredients, and stir well. Cook 1 minute or until thoroughly heated.

Yield: 7 (1/2) cup servings
