1 (16 oz) package Jimmy Dean sausage, cooked, crumbled and drained
4 green onions, sliced
1 cup shredded cheddar cheese
4 eggs
2 cups half-and-half or milk
1 cup all-purpose baking mix
Suggested toppings: sour cream, chopped tomatoes, chopped fresh parsley

Directions:
Preheat oven to 400º. Place sausage in lightly greased 2-quart round casserole dish. Top with onions and cheese.
Beat eggs, half-and-half and baking mix with whisk until well blended. Pour over cheese.
Bake 45-50 minutes, or until knife inserted in center comes out clean. Cool 5 minutes. Cut into 8 wedges. Add toppings.
Variation: substitute a 13x9" baking pan and bake 20-25 minutes.
