French Onion Soup Recipe

4 - 5 large yellow onions
3 tbsp butter
¼ tsp coarsely ground black pepper
1 tbsp flour
3 cans beef broth, undiluted
3 cups water
1 bay leaf
6 - 8 slices French bread
2 tbsp parmesan cheese
1 cup Gruyere or Swiss cheese, grated

Peel onions; slice thinly. In a large saucepan, over medium heat, melt butter. Add onions and pepper to melted butter. Saute onion mixture until onions are a light golden brown. Sprinkle onion mixture with flour and stir until all traces of flour disappear. Cook 1 minute longer, stirring constantly. Reduce heat to low and cook uncovered for 30 - 40 minutes. Discard bay leaf. Taste soup and add salt and pepper if desired. Turn soup into 6 individual onion soup bowls placed on a baking sheet. Toast the French bread slices in a toaster or under the broiler until they are light golden brown. Arrange toast slices on top of soup. Do not push them into the soup. Sprinkle with parmesan cheese and grated cheese. Place bowls 6" from the broiler. Broil soup until the cheese turns golden brown. Serve immediately.
